A Delicious Recipe for Pan-Roasted Beef with Savory Gravy

When it comes to a hearty and flavorful meal, few dishes match the satisfaction of a perfectly cooked roast beef. This simple yet delicious recipe offers a tender and juicy beef roast complemented by a rich, homemade pan gravy.

  • For the Roast Beef:
    • 2-3 pounds beef roast (e.g., sirloin or ribeye)
    • Salt and pepper to taste
    • Olive oil or vegetable oil
  • For the Pan Gravy:
    • 2 tablespoons butter
    • 2 tablespoons all-purpose flour
    • 2 cups beef broth
    • Salt and pepper to taste

  1. Prepare the Roast Beef: Start by preheating your oven to 375°F (190°C). Pat the beef roast dry with paper towels and generously season it with salt and pepper.
  2. Searing the Roast: Heat a skillet over medium-high heat with a tablespoon of oil. Sear the beef on all sides until it forms a beautiful crust, roughly 2-3 minutes per side.
  3. Roasting: Transfer the seared roast to an oven-safe dish or roasting pan and place it in the preheated oven. Roast until it reaches your desired doneness. Use an internal meat thermometer for accuracy:
    • Rare: 125°F (52°C)
    • Medium-rare: 135°F (57°C)
    • Medium: 145°F (63°C)
    • Well-done: 160°F (71°C)
  4. Rest and Prepare Gravy: Once the roast reaches the desired temperature, remove it from the oven and let it rest on a cutting board for 15-20 minutes. This allows the juices to redistribute, ensuring a tender result.
  5. Prepare the Pan Gravy: Place the roasting pan or skillet back on the stovetop over medium heat. Add butter and let it melt. Sprinkle in the flour and whisk continuously for a couple of minutes to create a roux.
  6. Create the Gravy: Gradually pour in the beef broth while whisking to prevent lumps. Scrape up any browned bits for added flavor. Let the gravy simmer and thicken for 5-7 minutes, seasoning with salt and pepper to taste.
  7. Slice and Serve: Slice the rested roast beef against the grain into thin pieces. Serve it with the savory pan gravy poured over the top or served separately.
